Autumn can give us a true spectacle of colors, scents and flavors. The vivid tones of summer leave us to give way to softer and warmer shades, the landscapes are tinged with orange, red and ochre creating enchanting sceneries in which to immerse ourselves with long walks and hikes on the Upper Rubicon Trails!
It is the time to breathe and love the smells of the forest, wood, earth, rain and moss to which are mixed those of autumn fruits and foods :pumpkin, pomegranate, grapes, mushrooms, chestnuts and truffles are just some of the delicacies that the earth gives us in these months. In fact, Autumn is also the time of year when cheese rests, matures and transforms in the pits to become Formaggio di Fossa di Sogliano. On November 25, St. Catherine’s Day, the pits are opened and sfossatura is performed, a process by which the cheese is brought back to the surface. Sogliano’s Yellow Gold is celebrated with the Fossa Cheese Fair, on Sundays of November 20, 27 and December 4.
