In preparation for the 51st Fossa di Sogliano PDO Cheese Fair to be held on 22, 29 November and 6 December, the pits in the historic centre of Sogliano al Rubicone open the doors to a journey through time and tradition, through the ancient ritual of hollowing.
The masters of this art will accompany you to discover a centuries-old practice, which will culminate in the tasting of this extraordinary excellence. A convivial moment dedicated to the discovery of the ancient practice of hollowing, a centuries-old tradition that combines territory, culture and craftsmanship.
