Fosse Tèra
We are inside ancient and characteristic tuffaceous environments in the historic center of Sogliano al Rubicone. When we store the cheese in our “pits” we scrupulously respect the ritual of always. Each “pit” has a name: “Broz, Buchel, Grotto, Pida, Air, Fire, Earth, Water.” They are nothing but the work, the bread, the feast, the essence of the 4 fundamental elements …to which to strive unhurriedly, rediscovering the silence, the greenery, the clean air, the signs of history and art for the pleasure of body and spirit. Following the rituals and rhythms of the old method of preservation, the “pits” welcome and enclose within them, after being carefully prepared, natural cloth bags filled with the precious cheese. After 3 months, at the peak of their maturation they are given back to the light. Here is the Fossa cheese of Sogliano al Rubicone.

– Formaggio di Fossa di Sogliano DOP (pecorino cow’s milk and mixed cheese)
Aged in the pit on commission.
