Fosse Brandinelli is a company specializing in the aging of cheeses in ancient sandstone pits from the Malatesta era (1300-1600). The company collaborates with local circuits to promote typical Romagna products and organizes guided tours and tastings with its cheeses by reservation: Formaggio di fossa di Sogliano DOP, CaFFFiero, BIRBO and other high quality selections paired with wines and typical local products.

On the occasion of the Sogliano PDO Fossa Cheese Fair, free guided experiential cheese tastings are held in the aging rooms.

What can I taste?
Formaggio di Fossa di Sogliano PDO (pecorino and mixed), Formaggio di Fossa non PDO (pecorino, cow’s, goat’s cheese, mixed), CaFFFiero (gold medal at the World Award Cheese 2019) and Birbo paired with wines (white, rosé, still reds and with bubbles), craft beer and typical products such as jams, Savor, Saba, caramelized figs and pumpkin, traditional cured meats or Mora Romagnola with piadina romagnola, boxes and rolls traditionally stuffed with our cheeses, pizzas with CaFFFiero, cracklings, rustarine, Bustreng, dry biscuits.

The products are selected very carefully, seeking quality in raw materials in order to give an experiential journey to our visitors.
