Fosse Brandinelli is a company specializing in the aging of cheeses in ancient sandstone pits from the Malatesta era (1300-1600). The company collaborates with local circuits to promote typical Romagna products and organizes guided tours and tastings with its cheeses by reservation: Formaggio di fossa di Sogliano DOP, CaFFFiero, BIRBO and other high quality selections paired with wines and typical local products.

– Fossa cheese from Sogliano DOP (pecorino and mixed)
– Non DOP Fossa cheese (pecorino, cow, goat and mixed).

Guided tour:
Yes, always (reservation required), min 2 people – groups up to 50 people are accepted.

Tasting?
Yes, reservation only – min 2 people, groups of up to 55 people accepted.
On the occasion of the Sogliano PDO Fossa Cheese Fair, free guided experiential cheese tastings are held in the aging rooms.

What can I taste?
Fossa cheese from Sogliano PDO (pecorino and mixed), non-PDO Fossa cheese (pecorino, cow, goat, mixed), CaFFFiero (gold medal winner at the World Award Cheese 2019) and Birbo paired with wines (white, rosé, still red and with bubbles), craft beer and typical products such as jams, Savor, Saba, caramelized figs and pumpkin, traditional or Mora Romagnola cured meats with piadina Romagnola, cassoni and rolls traditionally stuffed with our cheeses, pizzette with CaFFFiero, ciccioli, rustarine, Bustreng, dry biscuits. The products are selected very carefully, seeking quality in raw materials in order to give an experiential journey to our visitors.

Pairings with craft beers? Yes Recommended pairings:
CaFFFiero with Tergeno, Sogliano DOP Fossa cheese with A.R. or Arrocco, Birbo with Scacco Matto. Buffet tasting.
