Fossa Pellegrini ages cheeses from all over Italy, with ancient aging methods dating back to the 1200s/1400s in its own pits. In addition to the famous “Formaggio di Fossa di Sogliano DOP” you can taste various Fossa-matured cheeses (cow, sheep, goat, mixed) with the following brands: “Tesori Sepolti delle Terre Malatestiane,” the inimitable “Ammazzasuocere,” “il Prigioniero Innamorato” aged in a medieval prison, “L’Imperiale al Rubicone” in memory of Julius Caesar’s passage over the Rubicon. These cheeses are paired with honeys, jams and local products.
Those who would like to try the experience of aging their own personal cheese can try this experience by arranging with Fossa Pellegrini for all the necessary instructions. There is the possibility of visiting the “Fossa Cheese Museum” with a guide and various tastings at the farm by appointment.
